The festival starts today (Jun. 2) in Aledo, Illinois, and the guests will be vegging out on the tart, pink, celery-like plant.
Rhubarb can be baked into both sweet and savory dishes and that means the rhubarb will be served up in everything from pie to wine.
If this sounds like a recipe for indigestion, fear not: There will also be plenty of other non-rhubarb items.
Meanwhile, there will also be contests to find the biggest rhubarb leaf and the biggest rhubarb plant.
Although admission is free, organizers suggest getting there before noon to ensure you get your piece of the pie.
