The 19th Annual Austin Chronicle Hot Sauce Festival is this Sunday (Aug. 30), and the hottest ticket is the hot sauce competition.
Judges taste hundreds hot sauces made by bottlers, restaurants, and individuals a job that requires burning passion.
According to event organizer Erin Collier, the judges are suckers who swear off the fest each year, but keep on coming back.
They cry, sweat, and probably lose a few taste buds for every lick, proving that a Texas hot sauce addiction is hard to kick.
Collier says the hottest sauces are typically red ones made by Average Joes who like to test their fiery limits.
Judges take swigs of margaritas, water, or even ice cream between tasters to cool off, though Collier says most of them enjoy feeling the burn.
Theres also 700 pounds of chips flowing as chasers for those who like it hot.
