Chef Has More Soul Than You Know

NEW YORK (Wireless Flash - FlashNews) – Being the grandson of a woman dubbed “The Queen of Soul Food,” chef Lindsey Williams seemed destined for a career in the kitchen.

The fact is, Williams spent several years in the record industry and only recently returned to his culinary roots.

He says it bothered him that “soul food always had this stigma about it as unhealthy or very cheap and cheesy,” and he felt challenged to come up with healthier versions of the foods he loved.

His new cookbook, NEO SOUL (Avery), not only features soul classics with a healthy twist, it highlights Williams’ journey through the music industry and his lifelong struggles with weight.

He once tipped the scales at 400 pounds, but lost over half his body weight through healthy eating and exercise.

Williams is still musically inclined, and says he’d love to do a Neo Soul compilation album that can go along with this “kind of hip and artsy” cuisine.

He notes, “A chef is like a producer who’s playing with instruments and different beats...He’s keeping the fire hot!”
