Cinco De Mayo Could Make You Green

IRVINE, Calif. (Wireless Flash - FlashNews) – You could turn green this Cinco De Mayo (May 5), and not from too many margaritas – but from an avocado overload.

The California Avocado Commission has released some recipes to spice up your Cinco De Mayo fiesta that’ll turn other party hosts green because they’re made with – what else? – fresh avocados.

For example, if you’re looking for a zesty variation of a tostada dish, try making some “Aji Amarillo Avocado Tostadas,” which combine halibut, lime juice, olive oil, red onions, aji amarillo chile, ginger, cilantro, jicama, green cabbage, and avocados on top of tortillas for a crunchy treat.

If you’re in the mood for some real, authentic guacamole, the commission suggests making some “Autentico Guacamole” which mixes four large avocados with all the trimmings including ground cummin, tomatoes, white onions, chiles, cilantro, lime juice, salt, and pepper to be served with chips.

Finally, if you’re looking to impress your amigos with some unique tacos, the “Potato Rajas and Avocado Tacos” should put a new spin on things.

The fresh tacos consist of potatoes, onions, bell peppers, chilies, cheese, and avocados scooped on top of small corn tortillas for the perfect party snack.
