Rocco DiSpirito Spills Beans About Brownies

NEW YORK (Wireless Flash - FlashNews) – Chef Rocco DiSpirito is spilling the beans about how to make fatty comfort foods healthy – even brownies.

He’s just penned Now Eat This! (Ballantine), a cookbook featuring healthy, low-calorie versions of decadent comfort foods like burgers, mac & cheese, fried chicken, and desserts.

By swapping certain ingredients and altering cooking methods, DiSpirito was able to “crack the code” on all sorts of fattening foods.

This includes brownies, which he trimmed roughly 68 grams of fat and 1,450 calories from without sacrificing the taste.

Instead of using flour and sugar, he opted for black beans to add moisture, texture, fiber, and protein to the treat.

DiSpirito was also able to create a healthy rendition of lobster bisque – after about 60 tries – and a creamy mac & cheese using an onion-garlic puree instead of loads of butter and cream.

He’s convinced any dish can be made into a “guilt- less health food” if cooked at home, even his own personal weakness, pizza.
