Her name is Laila Spik and shes on a one-woman crusade to make reindeer the next big trend in health food with a new book, How To Cook A Reindeer (Lulu.com).
Spik says reindeer meat is leaner and healthier than pork or beef because they roam over a large area and eat a wide variety of food, depending on the season.
As a result, Dasher, Dancer and Prancers cousins are chock full of vitamins and minerals more than other kinds of meat.
Spik says reindeer is best when cooked quickly, and prefers it boiled or fried. However, she is partial to reindeer tongue and the blood makes for great pancakes and dumplings.
But reindeer isnt just for dinner anymore. She says its important to use all aspects of the animal, such as the leather for clothes and the antlers for knives.
