STOCKTON, Calif. (Wireless Flash - FlashNews) – Grilling meat is a delicate science and true sport.

Just because barbecuers don’t run or throw a ball, it doesn’t mean they don’t train tirelessly, and at the Way Out West BBQ Competition they’ll be able to show off all their hard work.

The event fires up this Saturday (Jul. 3) in Stockton, California, and pits amateur grillers against one another in a battle of the beef.

Spokesman Ben Lobenstein says that although there’s no running involved, competitive barbecuing takes lots of practice in grilling chicken, pork ribs, pork shoulder, and beef brisket.

Those who take it seriously even have to factor in science while manning the grill.

Lobenstein explains that the humidity and altitude can affect the flavor and cooking time of a good piece of barbecue.

Luckily, participants come prepared for anything, especially since they compete against some world famous roasters that they’d love to burn with their grill skills.
